The British Are Coming ... to Target: Chicago CityTarget to Include Pret A Manger Fresh-Prepared Foods Shop; Los Angeles, San Francisco and Seattle Likely

Fresh-prepared foods merchandising and retailing continues to get more interesting - and increasingly competitive - in the United States.

Today discount retailing giant Target Corp. announced it has inked a deal with the London, UK-based fresh-prepared foods retailer Pret A Manger to put one of its Pret shops in what will be one of Target's first four smaller-format (60,000-100,000 square-feet,) urban CityTarget stores - the store at the Sullivan Center in Chicago's Loop, which is set to open in July 2012. The Chicago CityTarget store will be about 100,000 square-feet.

Pret A Manger, which means "ready-to-eat" and has free-standing shops in New York City, Washington D.C. and Chicago in the U.S., along with in the UK and Hong Kong, prepares a variety of ready-to-eat  fresh foods daily in-store. Its offerings include sandwiches, salads, soups, sushi, meals, snacks, desserts and more. (See the menu here.)

The store, which will be about 100,000 square-feet, is set to open in mid-2012. The location is an excellent one geographically and demographically for a Pret A Manger shop. The other three CityTarget units, all on the west coast in downtown Los Angeles, San Francisco (in the Metreon Center in the South of Market District) and Seattle, are also set to open next year as well.

As we reported last year, Target also says it plans future CityTarget stores (10 total to start including the four above) in New York City, Boston, Miami, and Baltimore. All of the CityTarget stores will feature Target's "P-Fresh" food and grocery stores inside, which include an assortment of fresh produce, meats, perishables, frozen foods and packaged groceries.

"We believe Pret A Manger will help us provide guests in downtown Chicago with the exceptional, complete shopping experience they have come to expect from Target," Annette Miller, the retailer's senior vice president-grocery, said in making the announcement today. "Our Chicago CityTarget guests can pop in for a fresh sandwich or salad during their regular visits to our store for groceries or apartment essentials."

Target's announcement today about its partnership with the privately-held British fresh-prepared foods chain, which burger giant McDonald's once owned about a third of, was exclusive to the Chicago CityTarget store.

"We have no other plans in place today for adding Pret A Manger to other CityTarget stores, but we're excited for the potential for that over time," Miller said. "Pret A Manger doesn't have a presence on the West Coast today. That is one reason the partnership is just in the Chicago store."

However, earlier this year a good source told us Pret A Manger is looking to the West Coast, specifically San Francisco, Seattle and Los Angeles, three big cities with strong demographics that fit the retailer well (think demographics similar to those of Starbucks and Whole Foods Market) for its next strategic move.

The UK-based fresh-prepared foods retailer started out in the U.S. in 2000 in New York City, followed by launching in Washington D.C. (in 2009) and most recently (last year) in Chicago. There are currently 250 shops globally. Sales last year were about $530 million, according to Pret A Manager.

Therefore, based on the information we have, we expect to see what will be the store-within-a-store shops - the Pret A Manger in the Sullivan Center-Chicago CityTarget store will be about 2,500 square-feet - in the San Francisco, Los Angeles and Seattle CityTarget stores, if not right away when the units open next year, fairly soon after.

In our analysis the move is a smart one for both Target and Pret A Manager. It also could open the door for Target to add the fresh-prepared foods' shops in some of its Target discount stores where it's been adding the "P-Fresh" fresh food and grocery markets in west coast regions and neighborhoods that make sense, such as in parts of the San Francisco Bay Area, Southern California and metro and suburban Seattle, Washington.

Target is also opening a second store in San Francisco next year. That store will not be a CityTarget but instead an about 120,000 square-foot discount store. It will include a "P-Fresh" market inside. The location, in a small shopping center near the private, Jesuit-run University of San Francisco, has good demographics to support a Pret A Manger shop as well. The two stores will be Target's first in San Francisco.

Target has Starbucks units inside many of its stores. So in terms of demographics, one can look at the top-performing in-store Starbucks cafes and begin to get a good idea of which Target discount store locations might do well with Pret A Manger shops inside, should the partnership between the two retailers blossom beyond CityTarget.

Pret A Manger's prepared foods offerings fit well with the profile of the Target shopper, which is majority female, higher income as compared to Walmart shoppers, for example, and more upscale-oriented while still searching for value.

Therefore in our analysis this partnership has the potential to grow significantly. It gives target a high-quality and extensive fresh-prepared foods offering in its stores to go along with its "P-Fresh" markets while giving Pret A Manger a way to expand into new markets without having to acquire its own standalone shops, which can be an expensive proposition in places like San Francisco and Seattle.

This is a development worth watching closely, particularly since Target is adding "P-Fresh" units to hundreds of its about 1,762 U.S. discount stores (located in 49 states) each year.

Already, about half the units have the grocery markets inside. Over the next three years Target says it plans to have the fresh food and grocery offerings in up to 75% of its discount stores.

Having a fresh-prepared foods offering as a companion to "P-Fresh" in many of those stores has the potential to be a powerful one-two punch for Target, along with turning up the heat when it comes to fresh-prepared foods merchandising and retailing in the respective markets where it might add the Pret A Manger shops.

As a result, based on what we've learned from our sources, combined with what we learned earlier this year about Pret A Manger and its expansion desires and future plans, it's our analysis Target and Pret A Manger, although they plan to take the new partnership at a slow but steady pace, are already thinking far beyond the single store in Chicago, starting with the three CityTarget stores opening in Los Angeles, San Francisco and Seattle next year, and if all goes well looking far beyond that.

We could be seeing the makings of a very interesting Anglo-American food retailing partnership featuring London-based Pret A Manger ready-to-eat fresh food shops located inside selected Target stores. The debut will come in July of next year when the first one opens in the new smaller-format urban CityTarget store in Chicago.

First Reported Here January 2010: Walgreens' Launches Fresh Foods Program in San Francisco Bay Area

Just as we said it would do in this story - Walgreens' Eyeing San Francisco For Fresh Foods Program: Could it Strike Category Gold in the City By the Bay? - published back on January 25, 2010, drug store chain Walgreens is launching its fresh and fresh-prepared foods program in the San Francisco Bay Area, where Tesco's Fresh & Easy Neighborhood Market started opening its first batch of stores in March.

There are currently 11 Fresh & Easy fresh food and grocery markets in Northern California. Nine of the units are in the San Francisco Bay Area. The other two units are in Modesto, in the Northern Central Valley, and Vacaville, which is about midway between the Bay Area and Sacramento.

Walgreens' is launching its fresh and fresh-prepared foods program to start in about 30 stores in the Bay Area as a test, which is what it did in Chicago. The drug chain has hundreds of stores in the region, including 64 units in San Francisco alone, so the potential store base from which it can offer fresh foods is extensive.

The first batch of stores (15 units) getting the fresh foods sections include 13 units in San Francisco, one store in nearby Daly City and a unit in San Rafael (Marin County), according to Wagreens' media relations specialist Robert Elfinger and our sources at the Deerfield, Illinois-based drug chain.

Elfinger has released a list of the initial 15 out of the about 30 Walgreens' stores in the Bay Area that are set to have fresh and fresh-prepared foods sections in by the end of June 2011. The list is at the end of this story.

The fresh and fresh-prepared foods sections include a selection of fresh produce and meats; ready-to-eat foods like sandwiches, salads, wraps, sushi and other items; and fresh, ready-to-heat entrees, side-dishes, soups and other offerings. See the photograph at top.

Fresh foods and particularly fresh-prepared foods are a major offering at Tesco's Fresh & Easy. In fact, it's a fair analysis to say - and Tesco has said it - that fresh-prepared foods are the key offering or attempted point-of-differentiation the Fresh & Easy format is premised on.

In our January 25, 2010 story we said San Francisco would be the main initial focus in the nine county Bay Area for Walgreens. It is.

Two of the 13 San Francisco Walgreens' stores, including one at 25 Point Lobos/43rd Avenue at Lands-End in the Outer Richmond District that already has the fresh and fresh-prepared foods section and offering in-store, are nearby the first two Fresh & Easy stores Tesco plans to open in the city.

The other Walgreens' store that soon will be offering fresh and fresh foods and that's near a soon-to-be-opened Fresh & Easy market is at 5300 Third Street in the Bayview District.

The 43rd Avenue Walgreens' store is 11 blocks from the Fresh & Easy market we've reported Tesco plans to open June 22 of this year. [See - May 10, 2011: Breaking Buzz: Fresh & Easy Neighborhood Market Plans to Open First San Francisco Store at 32nd and Clement June 22.]

The Walgreens' unit at 5300 Third Street in the city's Bayview District is just down the street from the Fresh & Easy store at 5800 Third Street Tesco currently plans to open August 24, as we reported on May 14 here: Breaking Buzz: Fresh & Easy Neighborhood Market Plans August 24 Opening For Third & Carroll Store in San Francisco's Bayview District.

It's no mere coincidence Walgreens' is launching its fresh foods program in the Bay Area now. The program is quarterbacked by two former executives of Tesco's Fresh & Easy Neighborhood Market - Brian Pugh and Jim Jensen.

In fact, our January 6, 2010 report (here) - Breaking Buzz: Corporate Director of Fresh Foods Jim Jensen Leaves Tesco's Fresh & Easy - that then director of fresh foods at Fresh & Easy, Jim Jensen, had left the grocery chain and was joining Walgreens - and former Fresh & Easy vice president of retail operations Brian Pugh - at the chain's headquarters in Deerfield, Illinois was responded to eight days later when Pugh, who recruited Jim Jensen to the drug chain from Tesco's Fresh & Easy, confirmed our report by announcing Jensen had joined Walgreens' to head up its fresh foods program as corporate divisional manager of fresh foods.

We reported exclusively in this story on September 22, 2008: - Key Personnel Breaking News: Co-Vice President of Retail Operations Brian Pugh No Longer Employed At Tesco Fresh & Easy Neighborhood Market - that Pugh, who was initially Fresh & Easy's vice president of retail operations and later became its co-vice president of retail operations, sharing the position with Jeff Adams, had left the Tesco-owned fresh food and grocery chain. Prior to joining Fresh & Easy Pugh worked for United Kingdom-based Tesco in a couple of its other global divisions.

Three months later on December 22, 2008 Walgreens' announced Brian Pugh had joined the chain in a new position, vice president of format development. In March 2008 Walgreens' promoted Pugh to vice president of merchandising. He's responsible to a significant degree operationally for the drug chain's increased focus on food and grocery items in the stores over the last couple years, along with the fresh foods emphasis at retail, for example. Like they did during their tenure at Fresh & Easy, Pugh and Jensen have been working very closely together on implementing and rolling out Walgreens' fresh and fresh-prepared foods program, which currently is in about 200 stores in metro Chicago, New York City, including units of the Walgreens'-owned Duane Reade chain which already had its own similar program when Walgreens' acquired last year, and a couple other places in the U.S.

Along with the list of 13 Bay Area locations (out of the initial 30) released by the Walgreens' spokesman, we've  learned from a good source that a number of the remaining 17 units the drug chain is implementing its fresh foods program in are near some of the nine Fresh & Easy stores Tesco has opened in the San Francisco Bay Area so far this year.

For example, don't be surprised if the Walgreens' store located right next to the (click here to see a photo) Fresh & Easy store in Danville isn't soon offering fresh produce, grab-and-go sandwiches and salads, sushi, a selection of fresh meats, ready-to-heat entrees and side dishes and the other fresh and fresh-prepared foods - all very similar to what Fresh & Easy Neighborhood Market offers - in the store.


In fact, if you've ever seen any of Walgreens' private brand ready-to-heat entrees created by Jensen and his team, like the Lasagna Bolognese pictured above, you might be tempted to nickname them "Son of Fresh & Easy." Below is Fresh & Easy's private brand Lasagna.

When Jim Jensen was director of fresh foods at El Segundo, California-headquartered Tesco's Fresh & Easy Neighborhood Market he had overall buying/merchandising responsibility for fresh produce, meat, and deli/ fresh-prepared foods. That responsibility included fresh-prepared foods brand development in conjunction with the grocer's culinary team.
Further, don't be surprised if you see fresh and fresh-prepared foods pop up in a Walgreens' store - or two or three - in San Jose, including at stores near the two Fresh & Easy stores Tesco has opened in the city so far this year.

Walgreens' stores in Concord, Walnut Creek, Hayward and a couple other Bay Area cities - all near Fresh & Easy stores opened in March and April of this year in the cities - are looking pretty good for new fresh and fresh-prepared foods installations down the road as well.

We'll have more news, along with some in-depth analysis, about Walgreens' initial 30-store fresh foods and fresh-prepared foods program roll out in the San Francisco Bay Area in the next couple days.

As we said in our story published in Fresh & Easy Buzz 16 months ago, the San Francisco Bay Area region is a major focus for Walgreens with its fresh foods program.

That's because, as we also said in the January 25, 2010 story, the region offers great opportunities for retailers that offer fresh-prepared foods.

But in addition to that primary reason, there's a secondary one - the Tesco Fresh & Easy angle - which we've laid out for you a bit in this story - and in our past coverage and analysis (see the links below) of how Walgreens' fresh foods program relates to Tesco's Fresh & Easy via the Pugh and Jensen history and angle.

Raley's Supermarkets Introducing New 'Raley's Tonight' Fresh Heat-and-Eat Gourmet Entrees


Private Brand Showcase: Fresh-Prepared Foods' Category

West Sacramento, California-based  Supermarkets is introducing a new brand - "Raley's Tonight" - and new line of ready-to-heat, packaged, fresh-prepared gourmet meal entrees in its Raley's, Nob Hill and Bel-Air banner food and grocery markets in Northern California and northern Nevada this week.

The "Raley's Tonight" ready-to-heat gourmet entrees, which Raley's is merchandising in its refrigerated meat departments rather than in its service delis, were most of the grocery chain's prepared foods items are sold, come in nine varieties: Beef Florentine Flank Steak; Chicken Cordon Bleu; Asparagus Cheddar Stuffed Chicken Breast; Stuffed Boneless Pork Chop; Sausage Stuffed Mushrooms; Beef Fajitas; Chicken Fajitas; Beef Kabobs; and Chicken Kabobs.

The fresh, refrigerated packaged entrees, which are designed as a dinner for two people, sell for about $10 each, and take about 35 minutes to prepare in the oven.

Raley's already offers numerous refrigerated ready-to-heat entrees and side dishes, pre-packaged and in bulk, that take only a few minutes (quick meals) to prepare using  microwave oven, including its "Raley's TO GO" brand, which the grocer introduced last fall, and which we reported on in this story - October 30, 2010: Raley's Launches New 'Raley's TO GO' Pre-Packaged, Refrigerated Fresh-Prepared Foods Line.

However, the new "Raley's Tonight" heat-and-eat entrees are designed to take a longer (the 30-35 minutes) to prepare because of the premium quality, along with the fact the retailer is attempting with the new brand and line to tap into a growing trend among many consumers, who want pre-made meals that require some simple effort on their part, such as popping the entree in the oven and waiting for the timer to go off 30 minutes later, along with preparing something simple to have with the main course.

To this end, is offering consumers "complete dinner suggestions" for each of the entrees. The suggestions, which shoppers can follow, preparing the side-dishes while waiting for the "Raley's Tonight" entree of their choice to heat in the oven, are available in the stores, on the shopping list section of Raley's website, and on the product packages.

For example, Raley's suggests preparing and serving steamed vegetables and a white and wild rice blend to go with the Beef Florentine Flank Steak; steamed vegetables and au gratin potatoes to complement the Chicken Cordon Blue entree; and rice pilaf or risotto and a green salad with the "Raley's Tonight" Stuffed Pork Chop.

Raley's has been pioneer in the ready-to-eat and ready-to-heat fresh-prepared foods category since the late 1980's. Most recently the privately-held supermarket chain has been focusing on creating new brands and lines of ready-to-heat and ready-to-eat fresh, refrigerated foods under its Raley's and Nob Hill Trading Company private brands.

As an example, the grocer recently introduced a line of ready-to-eat gourmet panini sandwiches under its Nob Hill Trading Company brand, and a line of breakfast meal bowls under the Raley's brand.

The supermarket chain is also offering two ready-to-heat complete gourmet meals (designed to feed 8-10 people) for Easter -  Easter Lobster Ravioli Dinner and Eastern Bourbon Maple Glazed Ham Dinner - along with its Nob Hill Trading Company brand ready-to-heat premium Fire-Glazed Spiral Cut Ham, which is locally produced for Raley's by artisan meat guru Bill Andreetta, at his Sunnyvalley Smoked Meats in Manteca, California. Manteca is in the Northern Central Valley near Modesto, located about 80 miles from the grocer's corporate headquarters in West Sacramento.

Raley's operates 133 stores in Northern California and northern Nevada - 85 Raley's banner superstores (located throughout Northern California and northern Nevada), 22 Nob Hill Foods supermarkets (in the San Francisco Bay Area, the central coast and the northern Central Valley); 21 Bel Air Market supermarkets (in the Sacramento region); and five Food Source discount warehouse stores, in the Sacramento area and in the Bay Area city of Hayward.

According to company spokeswoman Ashley Zepernick, Raley's, which was founded in 1935 by Tom Raley, who died in 1991, and is owned by his daughter, Joyce Raley-Teel, currently has annual sales of $3.1 billion -  and about 13,400 employees.

Joyce Raley-Teel and her husband, James Teel, are co-chairs of Raley's board. Both are former Raley's senior-level executives, who retired from their respective day-to-day positions few years ago

Ms. Raley-Teel's son, Michael Teel, is the CEO of the family-owned grocery chain. Teel, who was the CEO of Raley's from 1996 -to- 2002  but left in 2002 to pursue entrepreneurial interests, returned last year as head of the chain to, in his words, "right the family ship."

Raley's has been struggling financially since 2009, and continues to struggle, although it's made some significant progress in the last year by cutting labor costs (layoffs at its corporate headquarters primarily) and streamlining its corporate structure; creating better operational efficiencies; improving its pricing profile and kicking-up its merchandising, marketing and promotional efforts.

"The growth of its private brand fresh-prepared foods program - including the introduction late last year of its  "Raley's TO GO" private brand entrees and side-dishes and the launching of the "Raley's Tonight" brand entrees this week - is one of the added merchandising efforts the 76-year old privately-held grocery chain has embarked on since Michael Teel returned as CEO in 2010.

Raley's, which is an innovator and pioneer among U.S. grocery chains in the fresh-prepared foods category, is promoting its 'Raley's TO GO' line launch extensively.

For example, this week the Sacramento-based family-owned grocery chain, which operates 133 stores in Northern California and northern Nevada under the Raley's, Bel-Air, Nob Hill Foods and Food Source banners, is featuring all 23 varieties of the pre-packaged fresh-prepared foods items in a promotion, which includes special price points - $5 each for all of the items except the family size entrees, which are $10 each - along with an added bonus: When shoppers buy any four packages (mix and match) of the $5 retail items (20 SKUs total)they get a fifth one free.

The $10 each family size meals provide four-six servings, according to the packaging. All of the items are designed to take about two and one half minutes to heat in a microwave oven.

In addition to promoting its new pre-packaged fresh-prepared foods line in its weekly advertising circular, Raley's has displays featuring the 'Raley's TO GO' products, along with colorful point-of-purchase signage in the refrigerated fresh deli sections, where the items are merchandised, in all of its stores.

Raley's is also promoting the new line on the radio, such as the promotion it's currently doing with Sacramento-based radio station KYMX. The promotion, which has been running since Wednesday, offers listeners a chance to win four free 'Raley's TO GO' meals each day. The meal includes one entrée and two side dishes.

The new fresh-prepared foods line was created by Raley’s corporate chef, Evelyn Miliate, who says about her inspiration for the products: "As a mom, I understand the need to have quick and easy dinner solutions that I can rely on. With Raley’s To Go, I can feel good about feeding my family food that I know they will love – and at a great value."

The "mom" mention in chef Miliate's quote dovetails with Raley's current positioning and marketing campaign focus, which is called "It's A Mom's World" (Raley's is, that is), and based on its Mom's World Panel, which is a volunteer group of mothers the grocer has assembled to provide the grocery chain with input, ideas, dialogue and feedback. Raley's has a special Facebook page and Twitter feed for its Mom's World Panel, as well as devoting this special section on its website to the group and campaign.

Raley's, which was founded by the late Tom Raley in 1935 and is still family-owned - his daughter Joyce Raley-Teel is the chairman and majority owner and her son Michael Teel is CEO - was one of the first movers among U.S. grocery chains in terms of getting into the ready-to-eat and ready-to-heat fresh-prepared foods category. It's been one of the food retailing leaders in the category since then.

Since the 1980's Raley's has offered an extensive selection of fresh-prepared foods in its stores. That offering has grown even more extensively in terms of the variety of fresh foods available. For example, the stores feature everything from simple ready-to-eat grab-and-go items like sandwiches and salads and ready-to-heat comfort foods, to a wide-variety of prepared ethnic foods and complete restaurant-quality gourmet dinners.

Raley's merchandises its fresh-prepared foods in both bulk deli-case-style form and pre-packaged. For example, sandwiches can be bought pre-packaged our ordered from the deli counter, where a clerk makes them by hand sandwich shop-style. Salads, meals, entrees and side-dish items are also available in both bulk and pre-packaged forms.

The 'Raley's TO GO' line of pre-packaged fresh, refrigerated foods is clearly designed to tap into the "on the go" shopper who doesn't want to order and wait at the deli counter for her fresh-prepared foods purchases. Raley's already offers numerous ready-to-eat and heat pre-packaged foods items, as mentioned above, but the new 23-item line is the most extensive introduction of convenience meals and related items the grocer has launched to date, based on our long time observation of Raley's.

United Kingdom-based Tesco's incoming CEO Philip Clarke (March 2011), who's currently head of the global retailer's international operations in Europe and Asia but not its Fresh & Easy Neighborhood Market fresh food and grocery chain in the U.S. (Tim Mason is CEO), said in an October 6, 2010 conference call reporting the Tesco plc's half-year sales that one of Fresh & Easy's advantages in California, Nevada and Arizona where it has its 168 stores is that the competition doesn't have the fresh-prepared foods offering that the Tesco-owned chain does.

Taking his statement as face value, that it isn't spin, which we do, it would appear Clarke isn't getting good competitive intelligence from Fresh & Easy Neighborhood Market headquarters in El Segundo, California when it comes to the fresh-prepared foods category and its competitors.

Additionally, based on his October 6 statement, it would also appear Clarke's not directly familiar with the numerous competitors (and soon to be competitors in Northern California in early 2011) to Fresh & Easy - Safeway/Vons, Walmart, Ralphs, Fry's, Raley's, Whole Foods Market, Trader Joe's, Bristol Farms, Bashas, Sprouts Farmers Market, Henry's Farmers Market (we could go on but will stop there) that offer extensive fresh-prepared foods selections in their respective stores and continue to add more variety and quantity to the offerings.

Memo to incoming Tesco CEO Philip Clarke: It's a fresh-prepared foods competitive jungle out there. Fresh & Easy's competitors in the category are many - and growing. Fresh & Easy has a good category offering - but it's just one among many competitors.

Raley's new 'Raley's TO GO' line of 23 varieties of pre-packaged fresh-prepared foods is merely one example of this growth, along with the continuing development in the category among grocers throughout the U.S.

Fresh & Easy Neighborhood Market Extending its 'eatwell' Healthy Foods' Brand Into Frozen Food Category

Fresh on the heels of the recent extension of its 'eatwell' private brand into the dry grocery category, from its original fresh-prepared foods origin, Tesco's Fresh & Easy Neighborhood Market is extending the healthy foods brand into the frozen foods category, and is set to launch the first 'eatwell' frozen products into the stores soon, Fresh & Easy Buzz has learned. The brand was launched in April, 2010.

The initial 'eatwell' frozen category items being introduced aren't "original items." Rather, the first batch of SKU's in the line consists of duplicates of some of the existing 'eatwell' refrigerated, ready-to-heat meal and side-dish items. The 'eatwell fresh-prepared foods line also includes ready-to-eat foods like salads and sandwiches. Those types of ready-to-eat foods aren't a part of the frozen line.

Tesco's Fresh & Easy has reformulated the refrigerated, ready-to-heat 'eatwell' items its launching in the frozen line, changing or adding certain ingredients but with just slight variational differences, to take into consideration the fact they're frozen rather than refrigerated products.

One advantage of offering a frozen version of some of the refrigerated 'eatwell' meals and sides is that the in-store shrinkage - and thus Fresh & Easy's having to mark down the fresh meals by 50% near the end of the shelf-life, and throw product away when the sell-by dates are up, which it does regularly with its fresh-prepared foods - is significantly eliminated, since frozen foods have a much longer shelf-life than refrigerated products do.

Additionally, having 'eatwell' items in the frozen category could add both brand and overall sales, since customers could purchase the frozen SKUs to store in their home freezers for use at a later time, which is something shoppers can't do with the refrigerated, fresh-prepared meals and sides because of the short shelf-life of the products. We call this concept "freezer loading." It's the frozen food category version of "pantry loading."

On the other hand, offering identical or near-identical 'eatwell' brand items in both refrigerated and frozen (and dry grocery) versions runs a risk of diluting the brand as it was originally created, as a fresh, refrigerated product. But that's a challenge with all cross or multi-category brand extensions, although fresh-prepared foods, because of their special fresh attribute, are more critical because often the brand name is designed to define the key product attribute - fresh. Using the same brand name on fresh foods, canned foods and frozen foods therefore has the potential to create brand confusion with shoppers.

At present, Tesco's Fresh & Easy doesn't plan on eliminating any of the fresh-prepared 'eatwell' items being duplicated by the new, frozen varieties.

However, we suspect the grocer might monitor the situation closely. For example, if sales of the duplicate frozen SKUs are as good or better than the refrigerated SKU's of the same variety, considering the longer shelf-life/less shrink issue, it wouldn't be a stretch to think Fresh & Easy Neighborhood Market might consider eliminating some of the fresh duplicates - in a SKU cut-and-paste sort of way - in favor of the like-variety frozen SKUs.

However, according to our sources, there are no current plans to eliminate any of the refrigerated 'eatwell' items and replace them with the duplicate frozen SKUs.

It's clear Tesco's Fresh & Easy has decided to make its six month-old 'eatwell' brand a multi-category private brand, having taken it from its introduction in April of this year as a fresh-prepared foods brand, to its recent extension into dry grocery, and now its introduction into the frozen foods' category. Those three categories, along with fresh produce and meat, make up the vast majority of sales in the 163 Fresh & Easy stores.

Tesco Launches Private Brand 'Lasagne Sandwich' in the UK Today...With No Apologies to The Earl of Sandwich

The Tesco Lasagne Sandwich went on sale today in all of the retailer's United Kingdom stores.

Tesco, the United Kingdom's (UK) leading grocer, third-largest food retailer in the world, and owner and operator of Fresh & Easy Neighborhood Market here in the former British colony now known as America, might just have John Montague, the Fourth Earl of Sandwich, who legend has it invented the humble sandwich in London in 1762, spinning in his grave at this very moment.

By the way, that same legend says the sandwich then made it's way to America after English cook Elisabeth Leslie, who migrated across the pond from the mother country, published a book here which included a recipe for ham sandwiches as a main dish.

Why might The Earl, who's original sandwich consisted of only some meat and cheese between two pieces of bread - that humble sandwich - be spinning in his grave?

Today Tesco launched what it's touting as the "World's First Commercial Lasagne Sandwich" in all of its UK stores. Yes, you read correctly - a lasagne sandwich.

Tesco's private brand Lasagne Sandwich, which we're sure already has our Italian (and others for that matter) readers a bit skeptical, "is made up of two thick slices of bread, a filling of diced beef in a tangy tomato and herb sauce layered with cooked pasta sheets and finished with a creamy cheddar, ricotta and mayonnaise dressing," according to its creator, Tesco food developer Laura Fagan.

"The inspiration comes from my own student days and how certain foods could sometimes taste much better the next day – such as pizza, lasagne and even curry," Tesco Lasagne Sandwich creator Fagan says.

"Lasagne sandwiches were a favourite of mine back in student days and were really popular with all my mates at university. It was the type of food that could be made very quickly from lasagne leftovers but could really keep you going between meals or equally prove to be the perfect breakfast food after a long night."

The sandwich is merchandised and designed to be served cold, although we suppose one could warm it up if they choose, in order to get that true "lasagne" experience.

In creatively venturing "outside of the loaf" in coming up with the world's first lasagne sandwich, Tesco also clearly decided not to aim the Italian meal between two slices of white bread at the health conscious eater. According to the Tesco Lasagne Sandwich package, it has 565 calories, which is over a quarter of the recommended daily caloric intake for an adult male.

Additionally, the lasagne sandwich's fat content is 26.9 grams, which is nearly 40% of that same adult male's suggested daily maximum.

In other words, the sandwich is in fast food territory. A typical quarter pound or triple burger from a fast food joint like Burger King or McDonalds has about the same caloric and fat content as the Tesco Lasagne Sandwich, according to a little research.

And if one wants to carbohydrate load, the combination of the cooked pasta sheets and white bread will probably do the trick.

Tesco has been reinventing the humble sandwich in the UK recently, without even an apology to the Earl of Sandwich who, according to that same legend, invented the sandwich when he asked for bread, cheese and meat to be brought to his table in a London gambling club so he could continue playing cards without leaving the premises to eat.

For example, in June Tesco created a Singing Sandwich in honor of the World Cup. The singing sannie played the Ole Ole Ole Ole football chant when the packaging was opened.

A couple years ago around Christmas time Tesco also launched what it says is the UK’s first ever commercially made sweet sandwich - a banana and chocolate creation between two slices of white bread.

The Earl would probably approve of that one, actually. Legend also has it he had a ...well, "legendary" sweet tooth.

But although we give it to the British retailer that its Tesco Lasagne Sandwich and World Cup Singing Sandwich are both commercial firsts, we beg to differ when it comes to the banana and chocolate version.

In our analysis, it's merely a variation on what was the favorite sandwich of America's King, Elvis Presley. The King's favorite sandwich, often referred to simply as "The Elvis," was a banana and peanut butter on white bread creation. He also regularly enjoyed a couple value-added versions. One was peanut butter, banana and fried bacon, plain or grilled.

The King also liked to have grape jelly added to the basic peanut butter and banana version at times, and there are reports he requested chocolate, along with the peanut butter and bananas, on more than one occasion.

Elvis ate his first peanut butter and banana (and probably version with chocolate) sandwich in the 1950's (and possibly earlier), over a half century ago. Therefore, Tesco's is an edited version rather than an original creation, of "The Elvis," in our humble analysis.

Additionally, recipes for various versions of "The Elvis" have been published in cookbooks in the U.S. for nearly as long, and numerous restaurants - P.B. Loco and Peanut Butter & Co. are just two - offer versions on their menus. Dozens of roadside diners, cafes and even a few grocery stores in the southern USA, where Elvis was born and lived most of his live, have sold the different versions of the peanut butter and banana sandwiches, including adding chocolate in some cases, for decades.

But were Elvis still alive, we have a feeling he would like Tesco's Lasagne Sandwich, as it has all the fat content and caloric heft of a peanut butter, banana and fried bacon sandwich.

We haven't yet tasted the Tesco Lasagne Sandwich. It just hit the stores in the UK today. But we plan on giving it a go when next in London.

But perhaps we won't have to wait until then. That's right, the burning sandwich question is: Might there be a fresh & easy brand Lasagne Sandwich hitting Tesco's 159 Fresh & Easy Neighborhood Market stores in California, Nevada and Arizona soon? That's a scoop we don't have. But as we often say - stay tuned.

When it Comes to Fresh, Prepared Foods, New York City's Duane Reade is Simply 'deLish' for Walgreens

Walgreen Co. is - as of Friday, April 9 - officially the owner of New York's Duane Reade drug store chain, which with 258 stores in the New York City metro area is the number one drug channel retailer in the market.

That's a big bite out of the drug (and food and grocery) retailing apple for the drug chain in the "Big Apple."

Walgreens says it plans to operate the stores under the Duane Reade banner (perhaps not forever), which is a wise move considering the strong equity the name has in New York City. It's CEO, John Lederer, also is staying on for now.

Walgreen Co. has 70 drug stores under the Walgreens banner in New York City. The acquisition of the 258 Duane Reade units brings its total store count 328 in New York City, which makes it fae and away the leading drug chain in the region.

There are nearly 7,500 Walgreens stores in the U.S. The retailer had 2009 annual sales of $63 billion. Duane Reade had 2009 sales of about $1 billion.

Ownership of Duane Reade makes the drug retailer's plans to get into the fresh, prepared foods merchandising and retailing business much, much easier than it was just a mere two months ago, when the leading U.S. drug store retailer announced its intent to buy New York City's 50 year old iconic drug chain for $618 million and the assumption of its debt in a friendly acquisition.

Walgreen Co. had announced its plans to develop a fresh, prepared foods program just a few weeks prior to its February 17, 2010 Duane Reade acquisition announcement, by the way.

Fresh & Easy Buzz first reported on Walgreens' plans to get into fresh, prepared foods retailing in January of this year.

We were the first publication to report that Walgreen Co. had hired former Tesco Fresh & Easy Neighborhood Market director of fresh foods Jim Jensen to head the start up of its fresh, prepared foods program, something the drug chain confirmed shortly thereafter. The reason Walgreens' development of its fresh, prepared foods program, which according to our sources is coming along nicely, just got easier for the chain is because Duane Reade has an impressive fresh, prepared foods program operating in some of its newest and most-recently remodeled stores in New York City, including its newest store on 8th Avenue (between 16th & 17th) in Manhattan's Chelsea district, and the location at 1350 Broadway (at 35th Street) in Manhattan, both of which we've visited.

The primary focus of Duane Reade's fresh, prepared foods merchandising is on offering an selection of packaged, ready-to-eat and ready-to-heat fresh, grab-and-go type foods under its own "deLish" private brand, merchandised in attractive and convenient refrigerated cases, like those pictured above and below. The ready-to-eat foods include sandwiches made by New York City prepared foods guru Eli Zabar (also pictured below), salads, ready meals, side dishes, snacks, desserts and more for all three meal occasions: breakfast, lunch and dinner.

The stores also feature a selection of fresh breads and baked goods merchandised in clear plastic display fixtures (pictured below).

All of its fresh, prepared foods items are made for and distributed to Duane Reade by local food vendors (like Eli Zabar) on a daily basis.

There's also a selection of manufacturer branded refrigerated fresh foods, along with a huge assortment of chilled beverages, in the stores' "grab-and-go" fresh foods area. Each store also has a fresh-brewed coffee station, like the one pictured below. Duane Reade's is a full-blown fresh, prepared foods program, not a mere hobby.

The stores look more like mini-supermarkets than they do traditional drug stores. (See below.) Think "channel bending" - one part small-format food store and one part convenience store, combined with a full drug store and pharmacy, with a fresh, prepared foods cherry on top. About all that's missing are fresh produce and traditional fresh meats. There are some convenience-type meats in the stores.

These newer and more-recently remodeled Duane Reade stores also feature an extensive selection of packaged foods, groceries, perishables and non-foods - which the chain has been adding in nearly all of its stores in various degrees depending on the available square footage of each respective store.

The key feature in these above product categories are Duane Reade's various food (and beverage) and non food private brands, which in our analysis and opinion are some of the best looking (design) and better quality store brands produced by retailers of any channel we've come across in recent times.

Duane Reade's fresh, prepared foods have been well-received in the New York City stores where they're currently being merchandised and sold. So much so in fact that including the category in its new and remodeled stores has been top priority for Duane Reade, which is something we're told will continue to be the case under Walgreens' ownership.

In fact, according to our sources, Walgreen Co. plans to speed up the process of putting fresh, prepared foods in the Duane Reade stores. It also plans to use the Duane Reade program as the blueprint for testing the sales of the ready-to-eat and ready-to-heat foods in some of its existing 70 Walgreens banner stores in New York City, starting fairly soon.

And of course, in terms of blueprints, the Duane Reade program is invaluable to the work ex-Tesco Fresh & Easy fresh foods director Jim Jensen and others are and have been doing for the last couple months in getting Walgreens' Fresh, prepared foods program developed.

New York City also happens to fit in very well with the drug chain's strategy for its fresh, prepared foods program, which puts an emphasis - but not exclusively by any means - on highly dense market regions like Manhattan, along with markets like Boston, Philadelphia, Chicago, San Francisco and others.

As we discussed in this January 2010 piece [Walgreens Eyeing San Francisco For Fresh Foods Program: Could it Strike Category Gold in the City By the Bay?] dense urban regions like New York City and San Francisco lend themselves well to grab-and-go and other forms of fresh, prepared foods merchandising and sales.

Walgreen Co. has lots of stores in both these cities (328 in New York City, population 13 million) and 64 in San Francisco, population 900,000) resulting in what in our analysis is an excellent formula for fresh, prepared foods retailing. That formula: Dense urban markets/ lots of people on the ground x having a high store count in such markets = a good grab-and-go prepared foods market. When it comes to fresh, prepared foods, Duane Reade gives Walgreen Co. not only the leading drug category market share in the number one urban market in the U.S. - New York City - it also brings the leading U.S. drug chain an already operating and largely successful fresh, prepared foods program right when it needs it most - during Walgreens' own category development stage.

Fresh & Easy's New 'EatWell' Healthier Fresh, Prepared Foods Brand to Hit Stores on April 7

Yesterday, Fresh & Easy Buzz broke the news that Tesco's Fresh & Easy Neighborhood Market is launching a new brand of healthier ready-to-eat and ready-to-heat fresh, prepared foods called EatWell. Fresh & Easy plans to launch the EatWell line in its stores on April 7.

Among the 17 varieties of ready-to-eat and heat prepared meals and sides in the new EatWell line include: Salads, like the Market Salad pictured at the bottom of the piece; and ethnic dishes, such as the Singapore Style Noodles, pictured at top; and the Latin Arroz Con Pollo meal, pictured below.

Most of the EatWell items will retail for about $3.99 and slightly below, accept for a couple of higher-end fresh salmon ready-meals - a 12 ounce Honey Dijon Salmon entree and a 12 ounce Teriyaki Salmon meal - which will sell for about $4.99 each.

The EatWell brand ready-meals and side-dishes contain less than 25% of the average daily requirement in fat, sodium, and calorie contents, based on a 2,000 calorie per day diet, according to the grocer.

In our report we noted Fresh & Easy was holding a preview and tasting of the line last night for a selected group of people. And the grocer did just that.

Many of the people attending the event last evening were personal bloggers, targeted by Fresh & Easy in the hope they will write about the event and the new EatWell fresh, prepared foods. Today, Tesco's Fresh & Easy is announcing the new fresh, prepared foods line on its Twitter.com feed.

One of those personal bloggers, Oakley Boren, who publishes the Fresh & Easy Neighborhood Market fan blog "Temple of Fresh & Easy," attended the EatWell brand preview and tasting last night at the grocer's headquarters in Southern California.

Today she published some photographs of the new EatWell line, along with additional pictures from the event, on her flickr.com site.

Additionally, Fresh & Easy previewed some new Fresh & Easy brand food and grocery items at the event last night. There are a couple photographs of those new items on the site.

Tesco's Fresh & Easy to Launch New 'EatWell' Brand Lower-Sodium, Fewer-Calorie Prepared Foods Line


Tesco's Fresh & Easy Neighborhood Market is preparing to launch a new line of fresh, prepared foods items under the EatWell brand, Fresh & Easy Buzz has learned.

Fresh & Easy is previewing the new prepared foods line to a pre-selected group of people this evening at its Southern California headquarters.

The new EatWell brand and line differs primarily from the grocer's current Fresh & Easy brand of prepared foods items in that it has less sodium and fewer calories than the grocer's current fresh, prepared foods items do.

The primary product focus of the new brand and line is on ready-to-heat prepared meals and side dishes, or as Fresh & Easy refers to them in the British vernacular, ready-meals.

If the EatWell fresh, prepared foods line does well, Tesco's Fresh & Easy could extend the brand into other product and store categories.

Interestingly, as a brand name EatWell has some British origins, just as Fresh & Easy Neighborhood Market, which is owned by United Kingdom-based Tesco, does.

The United Kingdom's Food Standards Agency, the British version of the U.S. Food & Drug Administration (FDA), uses "Eat Well, Be Well," as its official brand name or tag line, as you can see on its Web Site here. In fact, the Web site name itself is: eatwell.gov.uk.

The British government's Food Standards Agency also publishes a graphic guide called "the eatwell plate" (pictured above), which depicts how much of what foods from each food group people should eat in order to achieve a healthy and balanced diet. Walmart Adds Additional Marketside Fresh Food Items to Marketside.com Not Long After Our February Reports

Walmart has now added its Marketside private brand fresh soups, which we reported on in February [Walmart Introducing New Ready-To-Heat Prepared Entrees, Fresh Soups Under its Marketside Brand], to its marketside.com Web site. There are eight varieties in the ready-to-heat soup line.

In addition, Walmart just-recently added its eight-item Marketside refrigerated take-and-bake pizza line (pictured at the top) to the site.

The pizzas were the very first item Walmart rolled out in its Marketside ready-to-heat and ready-to-eat, prepared foods line. It introduced the pizzas in selected stores in fall 2009. The refrigerated pizzas take about 17-19 minutes to bake at in a conventional oven.

Walmart has recently given the Marketside pizza package a makeover, giving it a new look, and bringing its graphic design in line with all of the other Marketside private brand prepared foods products introduced to date.

The reason the soup line have now been added to marketside.com is because Walmart has rolled the items out to many more of its Supercenters and Neighborhood Market supermarkets than was the case when we reported on the new Marketside store brand prepared foods items in February.

The pizzas were only recently added to marketside.com because of the packaging makeover mentioned above.

Next up for brand Marketside is a line of artisian breads and baked goods. Walmart is currently preparing to start introducing some of the items in selected stores soon, we've learned.

Additional varieties of Marketside fresh, prepared entrees and other ready-to-heat and ready-to-eat food items are also in the works, as we've previously elaborated on in a number of the posts linked below.
